Cooking Corner: Cheese straws

Ingredients:

-2 pastry sheets
-Flour
-1 large egg
-Water
-½ cup parmesan cheese
-1 cup grated Swiss cheese
-1 teaspoon salt
-Ground black pepper
-½ teaspoon paprika [optional]

Recipe:
  1. Preheat the oven to 375 degrees F.
  2. Roll out the pastry sheets into 10" x 12" parts and dust them with flour so they don't stick to the surface.
  3. Beat the egg with 1 tablespoon of water and spread the mixture on top of the pastry sheets.
  4. Sprinkle the surface of each sheet evenly with the two cheeses, half a teaspoon of salt, some pepper, and any other spices you would like to add.
  5. With the back of a spoon or with your fingertips, press the ingredients into the pastry sheets.
  6. Cut the width of each sheet into 12 strips with a butter knife and twist each strip into a swirl.
  7. Spray the baking sheets before placing the strips on them. Bake for 10 to 15 minutes.
  8. Turn the straws over and bake for 2 more minutes. Make sure the cheese doesn't burn!

Beer review: The Reverend

web_beerAvery Brewing is known for its specialty beers and unique flavors. For the next few weeks, I will be covering the "Holy Trinity of Ale" by Avery Brewing Company out of Boulder. This trinity includes the Reverend Quadruple Belgian-Style Ale, Hog Heaven Barleywine-Style Ale, and Salvation Belgian-Style Golden Ale. All of these beers are distributed year round in 22 oz bombers, 1/6 barrel pony kegs or full 1/2 barrel kegs.

This week I bought ‘The Reverend Quadruple Ale' at $6 for 22oz, which, in my opinion, definitely deserves to be grouped into any trinity of beers. With a lively head and dark, red-amber color, this beer tastes even better than it looks, which is saying something! The malt, fruit and hops in this beer all come together to create an extremely satisfying beer that covers the whole gamut of beer flavors with each sip. As I drank this beer, I could not place my finger on all of the flavors it brings to the table. The hops are subtle, but there and delicious, enough to satisfy an IPA lover like myself, however, this beer only boasts 10 IBUs. Maybe it is just that I have the old saying, "Candy is dandy but liquor is quicker" in my head, because at 10% alcohol by volume, this beer not only awakens every taste bud you did not know you had, but it gives a slight alcoholic tingle when held in your mouth.
